High Protein Pancakes

High Protein no Flour Pancakes

1 cup old fashioned oats (blended into a powder)
1 cup low fat 1% cottage cheese
1 cup egg whites (or 7 egg whites if separating yourself)
2tsp aluminum free baking powder
2-3 tsp Truvia
dash of vanilla

ground oats into powder in blender
add egg whites, cottage cheese, baking powder, Truvia and vanilla, blend well

heat non stick griddle to medium temperature
spray with non stick cooking spray
pour or scoop batter onto griddle cook on one side until bottom is golden brown and top is bubbling
flip and cook until browned on other side (about 3-5 minutes total depending on stove)

Let pancakes set on paper towel for a minute before serving

Entire batch is 605 calories and 63 grams of protein and made 16 regular sized pancakes
a serving is about 4 pancakes for 152 calories and 16g of protein

***NOTE***
Top with SF jelly, SF syrup, Greek yogurt and fruit... whatever you like, and adjust calories and protein accordingly.
