Pan Seared Halibut

Pan Seared Halibut with Black Garlic & Mushroom Broth

Serves:

Total time: About 25 minutes

Ingredients:
* 6 oz. portion of Halibut Filet (skin on)
* 1 cup high quality fish stock
* 1 cup button mushrooms (roughly chopped)
* 1 head black garlic
* ½ Green mango (julienned)
* ¼ cup Enoki mushrooms

Prep:
1. Preheat the oven to 375°F.
2. Sear seasoned halibut over medium high heat in an oven-safe pan, skin side down, until slightly crisp (2-3 minutes).
3. Flip and place pan into oven for 6 minutes, or until cooked through.
4. Combine fish stock and button mushrooms in a sauce pan. Bring to a boil and then let simmer until reduced by half.
5. Discard mushrooms, season, and reserve broth.
6. Peel skin from garlic and puree the cloves until smooth.

To Serve:
1. Using a spoon, paint black garlic puree into bottom of a bowl.
2. Place mixture of mango and Enoki mushrooms in the bowl.
3. Place halibut in bowl, skin side up.
4. After heating broth to a boil, ladle into the bowl.
