Lasagna with Eggplant

Lasagna with Eggplant


1 Bread pan
Pam spray
Foil
1 Small Eggplant
1/4 pound Ground Hamburger/ Chicken/ or Turkey
1/4 pound Ground Sweet Sausage
1 Jar Four Cheese Sauce
Ricatta a small container
1 Egg
Mozzarella Cheese shredded


Preheat oven to 350

Cook the Sausage and other meat of your choice together in a fry pan
Drain meat once it is cooked

Mix small container of Ricotta with 1 egg

Peel eggplant and Slice eggplant lengthwise kind of a medium thickness

Spray bread pan with Pam

Spread a thin layer of sauce on the bottom of the pan

Place a layer of eggplant over the sauce (be sure to cover the bottom of the pan so cut other pieces to fit)

Place a layer of Ricotta mixture over the eggplant

Place meat mixture over the ricotta mixture

Place a layer of mozzarella cheese over the meat mixture

Place a layer of sauce over the mozzarella

Place a layer of eggplant over the sauce (be sure to cover all the sauce so cut pieces to fit)

Place a layer of the ricotta mixture over the eggplant

Place a layer of the meat mixture over the ricotta mixture

Place a layer of mozzarella cheese over the meat mixture

Place a layer of sauce over the mozzarella

Place a layer of eggplant over the sauce (be sure to cover all the sauce so cut pieces to fit)

Place a small layer of sauce over the eggplant

Place a layer of mozzarella over the sauce

Spray some foil with Pam

Wrap the top of the pan with the foil Pam side down. (This will keep the cheese from sticking to the foil)

Place the pan in the preheated oven and cook for an hour to an hour and a half.

Once it is complete the cheese will be a nice golden brown and bubbling. The eggplant wil be nice and mushy.
