Crock Pot Stuffed Peppers
Serves 4

ingredients:
4 peppers (tops cut off...save tops) and hollowed out
1lb ground beef or turkey uncooked
1cup cooked couscous or quionia or rice
2 cans diced tomatoes (spicy, italian stewed whatever you prefer)
1 egg
1 cup shredded cheese
chopped onion (optional)
mushrooms (optional)
spices- your preference ie: garlic, basil, crushed red pepper etc.

directions:
in large bowl mix together meat, spices, couscous, egg, 1 can of tomatoes, and the pepper tops (diced) and any other optional items like mushrooms and onion etc.

in crock pot pour 1/2 can of tomatoes on bottom, set hollowed peppers in crock pot, fill each pepper with 1/4 of meat mixture, pour remaining tomatoes over peppers and cook on low setting for 7-8 hours. 10 minutes before serving, sprinkle shredded cheese on top of peppers and cover. When cheese is melted serve.

Careful taking out of crock pot they will be soft and break easily. I use 2 spoons and lift them out slowly.
