Taco Stuffed Peppers


Taco stuffed peppers
Ingredients:
1lb ground turkey
1 McCormick Taco seasoning pack
1-2 cloves garlic, pressed
1/2 med onion chopped
1/2 cup shredded cheddar
1/4 cup bread crumbs
1 egg, beaten
Bag of sweet mini peppers
Directions:
Crumble up ground turkey, onion, garlic, salt and pepper to taste in Sauté pan. After browned add Taco seasoning packet and water it calls for. Follow directions on the package for cook times.
While that is cooking preheat oven to 350° and wash and prepare peppers, cut tops off and remove seeds...
When Taco meat is done stir in egg, cheddar cheese, bread crumbs and stir well until combined. Stuff peppers with mixture. You can stuff whole or you can try slicing in half and stuffing laying them flat on a baking sheet. I sat them semi upright in a muffin tin and kept them whole. Put in the oven for 15-18 minutes. Whole it was baking we made some guacamole and I ran to the store for sour cream lol. I ended up cutting them in half and topping with sour cream and guacamole like a little Taco shell.
